Dry pack breakthrough for live shellfish.....

One of the biggest probems with live shellfish starts the moment they leave our tender, loving care. Intolerant of rough handling or dry storage conditions they can deteriorate rapidly, losing shelflife and resulting in a loss of confidence on the part of the chef.

To combat this we have recently been testing a prototype "modified atmosphere packaging" machine. After much experimentation we are now gearing up to offer our live products in dry, 3kg trays, sealed in a protective natural atmosphere where they are safe from impact damage or drying out.

Exceptional shelflife has been achieved and with a recommendation of 8 days (or 48 hours after opening) this is a major breakthrough in quality control. Customers will soon be secure in the knowledge that these delicate shelfish can now reach them in optimum condition , safe from contamination or dessication, reducing wastage and simplyfing stock control.

The first batches are due off the production line as soon as the full scale machine is installed in November.
